Clean vegan Pumpkin Chocolate Chip Cookies!


I woke up this morning, felt fall in the air and was SO excited..

I know, we're still in August, we should be thankful we're still in summer...


...but seriously.. I'm in love with fall - and it didn't take me long to want to bake something with pumpkin today!

So here's my gift to you today: pumpkin cookies. And not just pumpkin cookies - but clean VEGAN cookies!

What you need:

  • 1.5 bananas, mashed
  • 1/2 tsp vanilla
  • 2 Tbsp olive oil
  • 1/2 cup pure pumpkin
  • 1 cup rolled oats
  • 13 cup sorghum flour
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • 2 Tbsp unsweetened coconut, shredded
Preheat oven to 350 degrees and spray a baking sheet with cooking spray.


Mix together mashed banana, vanilla, olive oil, and pumpkin. Set bowl aside.


In a separate bowl, mix together oats, sorghum flour, cinnamon, salt, and baking powder.


Add dry mixture to first bowl, mix until just combined. Add shredded coconut and chocolate chips and mix well.


Using an ice cream scoop or a spoon, scoop cookies onto the baking sheet, at least an inch apart.


Bake at 350 degrees for 20 minutes, or until done.
