Clean Oven Baked Chicken Fajitas

Remember when I told you that hubby's favorite food was chicken curry?

I remembered today how much this guy used to LOVE chicken fajitas. I don't mean clean ones either, I mean, the prepackaged stuff with all the sketchy chemicals in it that makes you feel gross afterwards.


I had thawed some chicken out today and needed to use it tonight - you know how that goes. You take it out with good intentions, then realize you have nothing to do with it? Yup, that was me!

I found this recipe and knew I had to try it for you guys! As always, I used what I had on hand for the most part, so I did tweak it some!

What you need:

Ingredients:
Prep time: About 20 minutes
Oven time: About 35 - 40 minutes
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp extra virgin olive oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • ½ tsp minced garlic
  • ½ tsp dried oregano
  • ¼ tsp salt
  • 1 (15 oz) can diced tomatoes - no salt added
  • 1 small can diced green chiles
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced (I used half a green and half a red)
Preheat oven to 400 degrees, and cut up chicken into strips. Place into a glass pan, and set aside.

In a small mixing bowl, mix together olive oil, chili powder, cumin, garlic, oregano, and salt. 


Pour over chicken strips and mix well, until chicken is thoroughly coated.


Cut up onions and peppers into strips, place into a bowl. Pour in chiles and tomatoes and stir together.


Pour over chicken mixture and stir well. 


Place in oven and bake for 30- 40 minutes, or until chicken is done.




I served these on a whole wheat wrap for hubby (who loves these so much more than the prepackaged stuff!), and 1/2 wrap for me.
