Sunbutter Cookies - Easy & fast!

This is my favorite recipe for cookies for my little guy when we're in a time crunch! They are completely vegan, and also free of his additional triggers like barley, eggs, etc.



He doesn't eat a lot , so I usually will make enough batter so he has four cookies to last him a couple of days.

What you need:


1/4 cup Sunflower Seed Butter (we get Trader Joe's brand - there is no dairy or soy cross-contamination!)
1 Tbsp Organic Applesauce
1 Tbsp Pure Maple Syrup
1/4 tsp Pure Vanilla Extract
1/2 tsp baking powder
3 Tbsp white whole wheat flour (again, we get Trader Joe's brand - there's no barley!)

Throw all ingredients together in a safe (no cross-contamination!) bowl and mix well with a fork.


Plop evenly on a greased cookie sheet (I use safe olive oil spray). Bake at 350 degrees for about 10 minutes - when you remove it from the oven, it should still be slightly spongey.



Allow to cool and watch your little one's face: priceless! ;)



Pssst - as an FYI, these cookies may turn GREEN after they've cooled!


Don't worry too much though! Sunflowers (including the seeds) contain chlorophyll, also known as chlorogenic acid. This acid reacts with the baking powder/soda in a recipe when heated and once the cookies cool, they may turn green! They still taste pretty good to us! ;)
