Ratatouille... Amanda style!

My sister is a Sous Chef... and she knows how to cook. I mean, REALLY knows how to cook. She has made this for our family a few times and I never thought to try it until tonight.. I had an overabundance of tomatoes, summer squash, and zucchini from our garden and it seemed like a good idea. Ratatouille is pretty easy to make and you can vary the ingredients. I didn't have any eggplant (I guess that's used in most ratatouille dishes) but it still came out pretty good. Hubby LOVED it anyways! So thanks, Sister! :)

What you need:
5 Tbsp olive oil
1 Tbsp Minced Garlic
1 medium onion
Red, yellow, green peppers, chopped (whatever you have on hand works fine)
2 medium zucchinis, chopped
1 summer squash, chopped
organic spinach, chopped
1 Tbsp chopped fresh cilantro, basil and oregano (or whatever you have on hand)
3 - 4 medium tomatoes, chopped
1/2 cup tomato sauce (no sugar, all natural tomatoes as ingredients)

Pour oil into a large pan (I used a wok, which was perfect) on medium heat. Add garlic and onion and cook for about 3 - 4 minutes, stirring frequently. Add peppers, summer squash and zucchini, and cook for 5 more minutes, stirring frequently. Add the rest of the ingredients and cook over low-medium heat for about 15 minutes, or until vegetables are softened. Remove from heat.

Hubby likes to have meat and pasta with his veggies, so he had an all-natural lean turkey burger and Trader Joe's bowtie pasta with his.

All in all, a win! Tasted great and very filling! We will definitely be using this one again! Enjoy!
