MSPI/FPIES Dairy/Soy/Tomato free zucchini pizza

I made zucchini pizza for hubby and I tonight (see recipe under Affordable Clean Eating Tab) and wanted to make something my little guy could have too. Zucchini, carrots, squash and kale are all safe for him and I had these left over tonight (Fridays are usually our night to use up the extra food we have, as we grocery shop on Saturdays).

First, I preheated the oven to 375 degrees. I then cut up carrots, squash, and kale into smaller pieces and added it to our small food processor, blending them together so they were small but not too tiny.


Then I took the  three small zucchinis and cut them lengthwise.


I brushed each piece with extra virgin olive oil and added the chopped veggies on top, spreading them as evenly as possible.


Since my little guy can't tolerate any cheese, garlic, onions or tomatoes, I simply put them in the oven as is and let them bake for approximately 45 minutes. Once the zucchinis were softened, I removed them and cut them into smaller pieces and drizzled some flaxseed oil over it for him to enjoy. I served it to him with organic applesauce. Simple but yummy!
