Affordable low-carb zucchini pizza!

Let's face it: some of us don't do all that great with carbs. If I make pizza, I'd love to say I could have one piece and be done. That's just not the case. I get addicted to the crust after one piece and easily could eat four or five slices before slowing down! So it's best if I just don't eat flour crust at all!

I have seen versions of this recipe floating around - however, as I've mentioned before, we are going through a financially difficult season right now so we cut back on unnecessary food like cheese. Also - I don't eat any dairy (for many reasons, one of the biggest is that it's just not the best thing for you!) so this recipe is basically a vegan version of what I've seen and what I had on hand.

We always go grocery shopping as a family on Saturdays. So Friday nights are our nights to use up what we have in the fridge.

Today we had zucchini from our garden, and leftover mushrooms, peppers, onions and tomatoes. I also had tomato sauce and minced garlic on hand.

I preheated the oven to 375 degrees and chopped all of the veggies except the zucchini:

Next, I cut the zucchini in half lengthwise and added tomato sauce and garlic:




I added all of the veggies on top of the zucchini. 

It took a LOT longer than I thought to bake - almost an hour! I think it was because the zucchini was so big! Our oven is kind of old too so that may have contributed to it.

If you can afford to buy cheese, that would make it taste much better. Overall, I really liked it though! I also made a version of this for my little guy which I'll be adding to the FPIES recipe list on here. :)
