Anyways, here it is:
Ingredients
Crust:
1 sweet potato, washed and peeled
2 cups frozen cauliflower (frozen is cheaper)
Sauce:
About 1/4 cup tomato sauce (plain, no corn syrup or unnecessary sugar)
Toppings:
Whatever veggies you have on hand. I used peppers, onions, mushroom, and fresh zucchini from our garden.
Boil about 6 cups of water. Chop sweet potato into small chunks. Add sweet potato chunks and cauliflower to the boiling water. Cook until softened. Drain completely (it will be watery at first, you will have to really make sure the water is drained). Mash:
Spread evenly in a greased pan (I sprayed it with olive oil first). Spread tomato sauce over "crust".
Chop veggies and sprinkle over top:
Bake at 425 degrees for about 15 minutes. Not sure how I'm going to get it so it's crunchy, but I will master it! Definitely open to ideas, though I'd like to keep the flour out of the picture! Either way, today's was SO good! The sweet potato made it!
