Vegan and Sugar-free Chocolate Chip Cookies - Allergen friendly!


Have you checked out my favorite go-to blog for clean eating recipes chocolate covered katie? This girl is a GENIUS!!!

AND I have been seriously CRAVING chocolate chip cookies - there's just one problem: chocolate chips have sugar!

BUT while grocery shopping tonight, I found a 100% cacao bar
(and got REALLY excited--------->)
 and knew I could make this work!

I based these on this recipe and let me tell you - I could even make a couple for my little guy without the chocolate or walnuts (both are BAD triggers for him). So we ate cookies together!! :)

What you need:
  • 2/3 - 1 cup flour (I used white whole wheat, which is safe for my little guy - I'd really like to try oat flour with this at some point!)
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • up to 1/3 cup cacao chips (again, I used a square from a cacao bar, and crushed it up into REALLY small pieces - this is key!)
  • 3 - 4 Tbsp honey, to taste
  • 1/2 tsp vanilla extract
  • 1 tbsp olive oil
  • 1-3 tbsp almond milk
Instructions
Preheat the oven to 375 degrees. 

Mix your dry ingredients, then add in wet. 


Form cookies, and make sure they're the right consistency. You may need to add in more flour, depending on which you choose. Bake 6-7 minutes. Take out when still underdone--they’ll continue to cook while cooling, and so you don’t want them to get hard!


Try to allow to cool before diving in ;) These make about 8 cookies.
