Clean Vegan Apple Pie

Ohhhh yes, this prego lady was VERY happy last week with this! ;)


The crust recipe is the same one I always use - it's safe for my little guy (who always approves), and very affordable and FAST to make!


I also made smaller apple tarts for my little guy with his organic apples :)


It was a big hit all-around with my boys!


Crust

4 cups flour
1/2 cup olive oil
1/4 cup water

Grease pie pan and set aside.

Add flour to a medium mixing bowl. Add olive oil, and stir until mixture is pebbly. Slowly add in water, until mixture starts to stick together.

Lightly flour a clean surface, and divide dough into two even-sized piles. Roll one of the piles into a ball and turn out onto floured surface. Knead about 6 - 8 times, and roll out, using a rolling pin. Drape the rolled out dough over the rolling pin, and place in pie pan, setting into place. Set aside. Roll out other ball of dough to be placed on top of the apple mixture.

Apple filling:

8 medium apples, peeled and cored
3 Tbsp whole wheat flour
2 tsp cinnamon
1/4 tsp nutmeg
1 tsp lemon juice
1/4 cup honey
1/4 cup water

Add all ingredients to a large saucepan, bring to a boil, and reduce heat to a simmer. Simmer for 10 minutes, and remove from heat.

Allow mixture to cool slightly, then pour into pie shell. Cover with second pie crust. Seal crusts with a fork. Using a knife, make holes in the top of the crust.

Bake at 350 degrees for about 35 minutes, or until dough is browned slightly.
