No Flour Brownie Cupcakes

Hey ladies!!!

I have to admit, I'm starting to look forward to the end of the week, it means I get to try out a new recipe to share with you ;)

First of all, can I just share how incredibly EXCITED I am about this new laptop hubby and I were able to purchase last weekend? No more logging onto the internet on my phone to re-find the recipe I'm using for my newest blog post. No more taking a picture and having to exit out of the screen then go back in.


So much faster AND I can listen to country music!

In my quest to find this week's recipe, I had a can of chickpeas in my pantry and some dark chocolate chips I wanted to use - it didn't take me long to find these muffins. I always see recipes posted by beachbody and think it looks great, but don't have all the ingredients... not so this time!

Let me admit something. I am in love with muffins. Some people could eat 3 dozen cookies in one sitting, I'm that way with muffins. It's bad. So I was pretty excited to find these!



There's no flour, no dairy, no added sugar (I mean, it DOES have dark chocolate chips, but I didn't add any extra sugar in, that counts, right? ;)

What you need:

Ingredients:
  • 1 (15 oz.) can chickpeas, drained, and rinsed 
  • 3 large eggs
  • 1/4 - 1/2 cup pure maple syrup (depending on how sweet you'd like it to be)
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 3 Tbsp. coconut oil, melted
  • 1 tsp. pure vanilla extract
  • 1/3 cup dark chocolate chips
Preheat oven to 350° F.

Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.

Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth. If you're like me, and only have a small food processor, I combined all of the ingredients and then added them to the food processor three separate times - it worked though! 

I also added chocolate chips at the end of each and mixed for about 1 second, to avoid losing the chips ;)


I also realized today that I'm used to making vegan desserts - it took all my strength to NOT lick the spoon!


Divide batter among 12 prepared muffin cups.

Bake for 18 minutes (Beachbody says 10 - 12 minutes, but mine took longer), or until toothpick inserted in center comes out clean.


 Cool completely and eat!


I also asked hubby to test one out for me - I think he liked them too ;)
