There are NO bread crumbs in this recipe!
I really didn't base this on any recipe - I threw it together and will just tell you what I used. Just use what you have on hand (depending on what that is)!
So let's get right to it! Here's what I used for JUST the turkey muffins:
- 1.3 lbs of lean ground turkey
- 1/2 medium onion
- About 2 Tbsp Fresh Garlic, finely chopped
- 1/4 Red Pepper, finely chopped
- 1/4 Orange Pepper, finely chopped
- 1 Egg
- 1 cup Quick Oats
- 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- Dash Cayenne Pepper
- 1/8 tsp dried Thyme
Preheat oven to 350 degrees. Spray a muffin tin and a small bread pan for any extra meatloaf.
Chop vegetables and add to a large bowl:
Add spices and egg, and stir well:
Add oats and turkey meat:
Stir well. Using a 1/3 measuring cup, scoop mixture into muffin tins. Pack the mix into each measuring cup, and then dump into the pan. Try to keep the mixture together as much as possible, and away from the sides to avoid burning. If you have extra from the mixture, add to a bread pan (spray with cooking oil first).
Cook at 350 degrees for 30 minutes, or until a meat thermometer indicates the muffins are done. They should be slightly browned.
