Veggie Lasagna


Hubby & I are trying to use up what's left from our garden - mostly summer squash! L can have lasagna noodles and we are still avoiding cheese and meats because of the cost - but this came out great! It's simply veggies with tomato sauce and noodles - affordable and easy!

 What you need:
Summer Squash (I used up 4!)
Grape tomatoes (Used a whole carton!)
 Fresh Kale - also from our garden :)
Tomato Sauce (Hannaford has a brand of tomato sauce with no added sugar or junk)
Lasagna noodles

Preheat oven to 375 degrees and spray a baking dish well. Chop and mix together squash, tomatoes, and kale:


Add in tomato sauce and mix well:


Layer veggie mix onto the pan, covering the bottom. Add a layer of noodles. Alternate until there are 3 layers of veggies:



Place pan in the oven and bake for 30 - 35 minutes. Remove and sprinkle any desired cheese on top. Place back in the oven and bake for an additional 10 minutes or until veggies are cooked. Eat and enjoy!
