Thanksgiving is right around the corner and L has never tried stuffing so I figured it was worth a shot! This was really easy to make and he loved it! As always, I used what I had on hand, but you can add any veggies that are safe for your LO!
What you need:
1/4 loaf homemade dairy/soy free bread, one day old - feel free to use my recipe here.
3 stalks organic celery, washed and chopped
1/4 cup organic corn
1/2 cup chopped kale
2 Tbsp and 1/4 cup olive oil, separated
1/2 cup applesauce
Spray a cookie sheet with safe cooking spray (again - I use an olive oil spray I found at WalMart with no soy). Cut bread into small cubes and arrange in a layer on the cookie sheet. Bake at 400 degrees for 10 minutes.
While bread is baking, mix together vegetables. Heat 2 Tbsp olive oil on the stove, and add veggies. Sautee for 2 - 3 minutes, just long enough to coat with olive oil and heat slightly. Remove from heat and add to a bowl, along with the bread from the oven. Mix together well and add 1/4 cup olive oil and about 1/2 cup applesauce until mixture is softened and coated evenly.
Spray a bread pan with safe cooking spray and line with parchment paper. Add mixture to the pan and bake at 375 degrees for 20 minutes. Remove from heat.
