MSPI/FPIES Waffles!

I love using this recipe for my little guy and hubby once a week! I try to eat a bit healthier and avoid flour whenever possible, but every so often I indulge in these as well!


This recipe was based out of the Better Homes and Gardens New Cook Book - I just switched out the ingredients for FPIES-friendly ingredients. If your little one can tolerate wheat, this recipe is perfect! Dairy, barley & soy free and so yummy!


Waffles:
-Dairy & soy free cooking spray (we like to use this brand of olive oil spray to avoid GMO's, and there's no soy!):
-1 3/4 cups barley-free flour (we use King Arthur unbleached white whole wheat flour if it's safe for your little one)
-1 Tbsp baking powder
-1 3/4 cups unsweetened coconut milk
- 1/2 cup olive oil
- 1/2 cup applesauce



In a mixing bowl, combine all dry ingredients. Make a well in the center of the bowl, set aside.

In a separate mixing bowl, mix coconut milk, olive oil and applesauce together. Add wet ingredients to dry by slowly pouring into the well. Using a fork, blend all ingredients until just combined (batter should be lumpy).



Plug in waffle maker and spray with olive oil spray. Pour batter onto the heated waffle maker and shut immediately.

While the waffles are cooking, make the topping:

Fruit Topping:
1 cup organic blueberries (frozen or fresh)
1 organic pear, chopped into smaller pieces
1/4 cup water

Combine all ingredients in a small saucepan and bring to a boil. Reduce heat to low and simmer (covered) for 8 minutes, or until fruit is softened. Pour over cooked waffles. Serve & enjoy!
