New & Improved veggie zucchini pizza!


Ever since the last time I made this and it didn't come out so great, I've been determined to perfect it! This one came out MUCH better! I based it off of this recipe but changed it around to fit our budget and taste. The zucchini & tomatoes came from our garden so that was free :) I like free!

Ingredients:
-3 zucchinis
-2 Tbsp olive oil
-2 tsp minced garlic
-1/2 cup tomato sauce (check nutrition label - there should be very little, if any, sugar or added ingredients)
-various veggies, chopped (I used peppers & onions and kept it simple)
- 3/4 cup cheese, grated
- tomato - chopped
- fresh basil, chopped

Preheat the oven to 400 degrees and grease two medium pans. Set aside.

Cut the zucchinis in half lengthwise, then gently scrape out all of the seeds, hollowing out a "boat" (I think this is where I went wrong last time).

Mix the olive oil and garlic together then brush this into the bottom of each zucchini half and sprinkle with salt & pepper.

Use a spoon to spread the tomato sauce into each:

Sprinkle chopped veggies over the top (except tomatoes and basil).

Add grated cheese:

Add tomatoes & basil, and sprinkle with remaining cheese (we had two different types, so we sprinkled Monterey jack on the top - yum!)

Bake at 400 degrees for 15 - 18 minutes, checking periodically to make sure it doesn't burn (I've found my stove takes longer to cook than others). Rotate halfway through baking.

Remove from oven and allow to cool. Enjoy!!
