Leftover night! Black bean & tomato soup :)

Tonight is leftover night - and we always use up whatever is left in the fridge because tomorrow we do our grocery shopping :-)

As you know, we are on a very strict budget, so we use up every scrap of food we can! Obviously, this dish isn't safe for my little guy but hubby & I sure enjoyed it!

Here's what I found in the fridge:
green pepper
yellow pepper
red pepper
orange pepper
black beans (from earlier this week)
tomato sauce (extra left from pizza the other day)
minced garlic

I found organic corn in the freezer, and added that, as well as ground cumin and black pepper.

Heat olive oil on low heat in a large pot on the stove. Add pepper (onions would go really well, but we didn't have any left) and garlic and cook for 2 - 3 minutes, then add the rest of the ingredients, plus 1/2 cup water. Keep on low heat and simmer for 25 minutes. It came out great! We had some flax chips from Trader Joe's we used up as well. (my fridge is very empty right now, by the way, which makes me happy the day before grocery shopping - it's less waste!).
