21 Day Fix - Chicken & Vegetable Dinner with Spaghetti!


Yup, that's right, spaghetti!! Who would think you can eat pasta and lose weight, right?! But hey, it's in the book so I created this affordable meal for us tonight! It's SO good!!

The breakdown:

1 Red
1 Green
1 Yellow
1 tsp


Ingredients:
1 pound of boneless skinless chicken breast
1 package whole wheat spaghetti
1 winter squash
1 summer squash
Assorted peppers
1 Onion
1 tsp Extra Virgin Olive Oil

Boil water and follow the package directions on the spaghetti. Usually it takes about 8 - 10 minutes to cook in boiling water.

Spray a pan with cooking spray and cut the chicken into cubes. Heat pan, then add chicken, searing both sides evenly until chicken is browned and cooked thoroughly.

While chicken is cooking, cut up vegetables (you can cut them small, or larger, depending on your preference). Once chicken is cooked, remove from pan and place on a separate plate. Clean that pan thoroughly (you can also use a different pan, but I HATE doing dishes!), then put about 3/4 cup of water in the pan. Bring water to a boil, then add the vegetables.

Cook the vegetables in water, or steam in a separate pan, until softened (usually about 8 - 10 minutes).

Measure each of the food in their respective container (fill the red with cooked chicken, the green with cooked vegetables, and the yellow with cooked spaghetti), then empty onto a plate. Measure and pour your tsp of olive oil over entire plate. Enjoy! :)
